The answer is Yes, even with the Infinity Gauntlet, Thor can defeat Thanos with Stormbreaker. In fact Thanos confirms it right before the snap. When Thor buries StormBreaker into Thanos’s chest, Thanos states “You should have aimed for my head.” or something to that effect. Because Thor wanted to look Thanos in the eye while he died, Thor is ultimately responsible for the end of half the life in the Universe. If he had gone for the head, he could have killed Thanos before he could react and use the Infinity Gauntlet. So by understanding that, we know that with StormBreaker, Thor could defeat Thanos with or without the Gauntlet.
